Fresh Quinoa Salad


Summer is almost over and the Parisian weather not so clement, two very important reason to believe we’re still in our dream destinations! Here is a recipe to help you in the process!

In the summer, I very often crave for something light and fresh for lunch, it’s way to warm for a fondue…. So I get creative and improvise my salads! Here I made this salad for a family meal so we were about ten. I will indicate the quantities for 6 people, but you can adjust it depending on your needs!

What you need (6 people):

  • Quinoa
  • 1 Tomato
  • 1/2 a Red Pepper
  • 1/2 a Green or Yellow Pepper
  • 1/2 a Cucumber
  • 1 Spring Onion
  • A Few Branches of Parsley
  • 1/2 a Lemon
  • 1 Garlic Clove
  • Olive Oil
  • Balsamic Vinegar
  • Salt
  • Pepper
  • Honey (Optional)

A. Cooking the Quinoa:

For one mesure of quinoa you put in three measure of water. Put the water to boil with salt. Once the water boils, add in the quinoa, and let it cook for 10 minutes. Shut down the gas, cover the pan and let it rest for 5 minutes. After that, the quinoa should have absorbed all the water left over. Poor it in a big bowl, and let it cool down on the side. I strongly advise NOT to rince it under cold water to cool it down, it will make it all soggy.

B. The Salad:

If the quinoa has cooled down, add in the ingredients as you go, otherwise set them aside and add them all at the end.

Chop the peppers.


Chop the onions.


Chiselled the parsley.


Chop the tomatoes and the cucumber.



C. The Dressing:

Crush or dice the garlic clove. Squeeze half a lemon. Add in 2 spoons of olive oil and 1 of balsamic vinegar. Salt, pepper as you like it. If the dressing is too sour, add in a table spoon of honey. You can add coriander, parsley, oregano, either n the sauce if they are dried herbes or in the salad if fresh!




Once the dressing is ready, add in all the ingredients to the cooled down quinoa. Give it a good mix and add in the dressing.


Sprinkle with fresh herbes for decoration! It can serve as a main or a side! Up to you!
